Cool Down with a Scrumptious Ice Cream Sandwich

The only thing better than chocolate chip cookies and ice cream is combining the two for scrumptious sandwiches that beat the summer heat. And, hello! Homemade ice cream cookie sandwiches are fun to make. Assembling these sweet sandwiches is a fun food activity to do with the kids.

Chocolate Chip Cookie Ice Cream Sandwiches

Serves 8

Ingredients

For Chocolate Chip Cookies
1 ¼ cups all-purpose flour
½ teaspoon baking soda
½ teaspoon salt
7 tablespoons unsalted, room-temperature butter
2 tablespoons granulated sugar
¾ cups packed brown sugar
1 teaspoon vanilla
1 egg
1 cup mini chocolate chips

For Ice Cream Sandwiches
Chocolate chip cookies, from above
½ gallon vanilla ice cream
1 cup sprinkles

Directions

For Chocolate Chip Cookies
Preheat oven to 350 degrees F. Place a piece of parchment paper on the inside of a baking sheet.

Place the flour, baking soda, and salt into a medium size bowl; whisk, then set aside.

Fit a stand mixer with a paddle attachment. Place the butter, granulated sugar, and brown sugar into the stand mixer bowl; beat on medium speed for about 4 minutes, until light and fluffy, scraping down the sides of the bowl if necessary. Add the vanilla and egg into the stand mixer bowl; beat for about 30 seconds or until combined. With the mixer on low speed, slowly add the flour mixture to the stand mixer bowl; mix until just combined, being careful not to over beat. Turn off the mixer.

Pour the chocolate chips into the stand mixer bowl and fold in the chips using a rubber spatula. One cookie dough ball at a time, scoop out about 2 tablespoons of the cookie dough and shape into a ball. Set each cookie dough ball onto the parchment paper, setting the cookie dough balls 2-inches apart. Bake the cookies for approximately 12 minutes or until the edges of the cookies start to turn brown. Remove the baking sheet from the oven and allow the cookies to cool in the pan for 5 minutes before transferring the cookies to a wire rack. Once the cookies are completely cool, set them in the freezer for 30 minutes.

For Ice Cream Sandwiches
To assemble the ice cream sandwiches, put about ¼ cup of a scoop of ice cream onto the bottom side of one cookie. Top the ice cream with the bottom side of another cookie and gently press together. Note: If your ice cream is really hard, you may want to let it melt just a little bit so that the cookies do not break when assembling the ice cream sandwiches.

Pour the sprinkles onto a shallow plate. Roll each ice cream sandwich in the sprinkles so that they coat the sides of the cookies. Serve immediately or wrap tightly in plastic wrap and freeze.
