Amazing Gourmet Grilled Cheese
The classic grilled cheese gets the gourmet treatment with Gruyère and roasted-to-perfection mushrooms and onions. Use a sweet onion for ultimate caramelized flavor and use your favorite mushroom variety. You can even swap out the Gruyère cheese for Gouda or Brie.
Gruyère Grilled Cheese with Roasted Mushrooms and Onions
Serves 2
8 ounces mushrooms, cleaned and sliced
1 medium sweet onion, sliced
2 tablespoons olive oil
Salt, to season
Freshly ground black pepper, to season
4 tablespoons butter
4 slices of bread, your choice
1 cup shredded Gruyère cheese
Preheat the oven to 400 degrees F. Put the mushrooms and onion on a baking sheet. Drizzle the mushrooms and onions with the olive oil, then season with salt and black pepper; stir. Bake the vegetables for 20 minutes or until desired degree of doneness is reached.
Melt 4 tablespoons of butter in a skillet set over medium heat. Assemble the sandwiches while the butter is melting. On two of the bread slices, evening distribute ½ of the shredded Gruyère, all of the roasted mushrooms and onions, and then the remaining shredded Gruyère. Salt and pepper to taste. Top with the remaining two slices of bread. Gently press on the sandwiches.
Set one sandwich in the melted butter, then immediately flip the sandwich over. Repeat with the second sandwich. Let the sandwiches cook until they are golden brown on the bottom. Carefully flip each sandwich over and cook until golden brown on the bottom and the cheese is melted. Serve.
